Whiskey Two runs on two ranches held by the same family — the Buchanan Ranch and the Walski Ranch. Ryan and Callie Watson open them one small group at a time for whitetail, turkey, axis and the occasional dove hunt, with home-cooked meals and a choice between two very different kinds of Texas hospitality.
The Buchanan Ranch has been in the family for more than 100 years. At its peak the property covered approximately 4,500 acres of Texas Hill Country between Blanco and Wimberley. Today the ranch encompasses roughly 2,100 acres, and the family remains committed to preserving its land, history and character for generations to come.
Reminders of the ranch's earliest days can still be found throughout the property, including the original homestead, last updated around the 1930s, which makes a memorable setting for photographs after a successful hunt. Towering bluffs line the Blanco and Little Blanco rivers, while rolling hills, open cattle pastures, rugged cliffs, river-carved caves and thick cedar create a landscape that captures the true character of the Texas Hill Country.
The ranch house features a king bed, a queen bed and two bunk beds, comfortably accommodating up to eight guests. This one is for people after an authentic cowboy escape: dinner in the barn alongside the horses, the rivers where the Blanco and Little Blanco meet, and a historic piece of the Hill Country that is rarely accessible without private land access.

The Walski Ranch has been in the family for approximately 20 years. Originally established as a private 360-acre retreat for Pete and Barbra Walski, it has since become the heart of Whiskey Two's operation.
The ranch was initially developed with the goal of raising several exotic species, but the historic winter freeze devastated much of the exotic wildlife population. Today native Texas wildlife continues to thrive, offering opportunities to pursue whitetail deer, Rio Grande turkey, dove, predators and feral hogs. The ranch is also home to select exotic species, including scimitar-horned oryx and axis deer.

The regular whitetail season is archery-only. It keeps the country quiet and the deer where they should be.
Limited rifle opportunities in January are set aside for introducing young hunters to the outdoors. Details case by case.
Whiskey Two sits in the classic Hill Country hunting corridor — rolling oak-cedar country with spring-fed water, native browse, and just enough elevation to hunt smart. With both ranches held by the same family we can move with conditions instead of forcing a hunt on ground that isn't right that day.
Fredericksburg, its wineries, and Wildseed Farms are a short drive; San Antonio and Austin airports both work.
Whiskey Two is built on the two family ranches, and that is not changing. They are the heart of what we do and they always will be. But good Hill Country is stitched together out of neighbors, and we are steadily building relationships with landowners around us who want their ground hunted the way we hunt ours: small groups, light pressure, and respect for the place.
